The prestige of power ful Government administration, the reput— |} ation of the Government in having suc | cessful'y assisted in putting Canadian | cheese and Canadian butter on the British tuarkets in the best way, would vanquish the active hostility of the retail butchers, without any keen commercial strugzle in volving loss. The Government would be in & position to select the pick of the cat- tle at Montreal, and it would ettectually prevent any such sentiment being forste: upon the consumers in Great Britain. to | wards the dressed beef trade from Canada jas wonld make them of it country, which were’not fat enough, fine | enough, or large enough to be shipped aitve “. It need not be managed by the Goy- ernment for longer than one year, when loubtless a joint stock company conld be which has been done by the dairying ser- vice of the Dominion Department of Agri Island may_be cited as an instance in point. In 1892 a jomnt stock Company of farmers erected the building for one dairy station on the islen |, ‘he Government loaned the machinery and apparatus to fit up thet ene factory for the making of cheese. The Dairy Com- missioner took charge of the business and manufactured the cheese for the patrons at a charge of two anda half cents per The revenue frum that source nearly met the expenses, Next year- 1803 —joint stock companies of farmers had erected, fully equipped and_ fitted up at their own expense eleven dairy stations, These were patronized by 1,187 patrons, and t out cheese during the short immer to the value of $i8,600. A manu- turing charge was made for the making 1d marketing of the cheese and providing furnishings in jconnection therew th. i¢ net cost to the Government for takir g ‘ontrol of these abou pound, irned fa ar TI eleven dairy stations was $2,590 for the year. A sum of $40,000 was p'aced in the estimates by the Gov ernment and granted by Parliament, ‘to mote dairying interests by. advances,” which have been paid to the Patrons of lairy stations in’Prince Edward Island, Nova Scotia, New Brunswick, Quebec, Ontario, an! the Northwest Territories. the cheese and butter from the dairy sta. tions were told. The whole amount of that sum is to be refunded every year in full to the credit of the Reeeiver-Gen-— era), and thus no cost or loss is involved to the Goverament from it. Daring the current year of 1895 the Jairy Commissioner managed in a simi- way 28 cheese factories and two creameries omPrince Edward Island. ‘he whole of the proceeds from these have not yet been sold, but the value fur the year ot the cheese and butter made un Prince Klward [sland ai tli@se dairy stations will be nearly $190,000. The revenue from manufacturing cheese and butter at these 28 cheese factories and two creameries during the year, up to the T i i iar the charge made fur end of October, will be quite suffi cient to meet all the expenses incurred, and thus the business there has become already entirely self-sustaiving. A new and valuable industry has been founded on the island, and c n be conducted here- after with much advantage to the farmers Probably Government management and supervision to a few of the smaller factor- ies should be continued for another year, or poss.bly two years, but the larger fac- tories can be run, and run profitably and successfully, by the joint stock companies and farmers themselves, Indeed, the whole work of the dairying service in al] the provinces during the past four years has been analoguos to that which has been cited from Prince Edward Island, and it is only from the fact that no - co-operative dairying was being carried on successfully on the Island befure the Government took charge of this illustrative and initiatory work, that a more definite aad exact state- ment of the progress there can be made than could be cited from the other provin- ces. The action of the Government in intro- ducing fresh-made Canadian creamery butter on the English markets in Jannary, lebruary and March of the current year, with such satisfactory results, followed up by arranging fur cold storage facilities on raliways, at warehouse in Montreal and on board the steamships is also analogous to the class of work required to be done to open up an export trade in Canadian dress ed meats, A beginning could be made also in a trade for the shipment of “chilled Canad- jan mutton” and “chilled Canadian poul- try,” through the same agencies. Associ- ated industries, such asthe rendering of tallow, the tanning of hides, the making of giue and others, would de created by the establishment of this major business. The cheese trade of Canada has reached proportions as large as seem to be safe, excepting for the natural annual growth, which gmay keep pace*With the annual growth of demand from” increase of con- sumers, The making of butter in cream- eries during the winter can be extended very greatly, and joined to it should be the feeding of cattle and swine for beef and pork uses. If the business of shipping dressed meats be begun at once, it would give saf ety tothe outlook for the whole of the live stock interests of Canada and pre- vent a panicy disaster, which might come at any time if our cattle were excluded and could not be landed alive in Great Brit- ain. An export demand for Canadian dressed beef might be created, which would last during the year, Immediately after the close of naviga- tion at the port of Montreal reports of cat- tle from Canada practically cease. That r sults in great lowering of the prices ot f t cattle until the opening of navigation during the following season. During the present month, it is reported that quarters of beef are being cold in Toronto and other markets as low a3 two cents per pound. In former years it has led to the ship ment of surplus beef trom the western provinces into the Maritime Provinces. That bas prevented the farmers in those lovalities from selling their fattened cattle to advantage. A profitable demand, ‘such as would be creat d by the inauguration of a dressed beef trade from Canada, and con- tinuing during every month of the year, would take all surplus fattened cattle in the western provinces and Quebec for Great Britain and leave the markets of the Maritime Provinces bare and available to the farmers advac. nt to thece. Thus, the opening up of an export trade to Great Britain in dressed “meats would an undounted, immediate and lasting bene- fit to the farmers in all the provinces of Canada lying between the Rocky Mount- ains and tne Atlantic coast.
