Put all together and bake ina slow oven for two hours, stirring often during the first hour Apple Pudding—One cup tapioca soaked several hours in cold water, one cup of sugar, a pinch of salt, one-half nutmeg, grated. Slice apples into & dish until two-thirds full; add the other ingredients, with water enough to cover. Put a cover over it and bake slowly three or fuur hours. Serve either hot or c¢ ld, as desired. baking Blackberry Tapioca ioca soaked lv or One cupful tap 2 hours in cold water; add one pint of hot water, and simmer until clear; sweeten one quart of black- berr.es and stir into the tapioca. Pour into a deep dish and serve very cold, with sugar and cream. Jelly--Three quarters of a cupful of tapioca, soak, then boil it in a double boiler, with one and e half pints of hot water and a pinch of salt. When it thickens, add two thirds of a glass of apple, currant er lemon jelly and a httle sugar. Cook about half on hour, or until the tapioca is clear. Put it in & mold, and when perfectly cold, turn itout. Serve with whipped cream or soft custard. Custard—Soak three large spoonfuls of tapioca in one quart of water for sev- eral horrs. Boil one quart of milk and 8 ir in the soaked tapioca; boil about 10 minutes until itis clear. Beat yolks of three eggs, one cup of sugar, one tea- spoonful of vanilla or other flavoring, aud add gradually to the tapioca; boil pour intoa dish and mix i lightly the whites of the eggs beaten tv a stiff froth. Eat cold with sweetened cream. Blanc Mange—One cup of tapioca, three cups of boiling milk, three table- spoonfuls of white sugar, a pinch of salt, any flavoring desired; soak the tapioca several hours in a little cold water: pour it into the boiling milk and let it boil for about twenty minytes, stirring it constantly; add sugar and flavoring. Take it from the fire and your into molds. Serve cold. Tapicca and Peach Pudding—One f.ve minutes; large cupful of tapioca; soak in three pints of cold water over night. In the morning putin the double boiler and cook until it looks clear; add one cup of sugar and one dozen peaches pared and cutin eighths; putin a buttered pud- ding dish and bake one hour. Serve cold with sugar and cream. Fruit Dessert—Make a plain blanc mange or jelly by boiling soaked tapioca until clear in either milk or water; put a layer of mixed preserved and candied fruitsina ylass dish, and when the tapioca has cooled sufficiently, pour a part of it over them; add more fruit and the remainder of the tapioca. Serve cold. Soup—Two quarts of stock, one cup of tapioca; let it boil for twenty min- ntes, stirring it frequently; one tea- spoonful of sugar, one tablespoonful of catsup, butter half the size of an egg, half a teacup of milk; cool slightly and stir in two well beaten eggs. It must not be hot enough to curdle the eggs, but should be smooth like cream. os Curious Properties of Spices. The aroma of red cedar is sid to be fatalto house moths. The aroma of black walnut leaves is fatal to fleas. It is a matter of common observation that persons eugaged in the business of mak- ing shingles out of odoriferous cypress timber in malarial districts are rarely, if ever, effected by malarial diseases, and that persons engaged in distilling tarpentine do not suffer from either nialarial diseases or consumption. It is sid that when cholera was epidemic in persons working in livery stables wereentirely exempt from it. It is affirmed that since the destruction of the clove trees on the inland of Ter- nate the colony has suffered from epi- demics unknown before, and in times when cholera has prevailed in London and Paris those employed in the per- fumery factories have escaped its ray- ages.
