Jenkins, whose letter appears in
yaur issue of Feb. 20th, I _wish
to say that we cannot remove the tempta-
tion to skim or water milk, by any method
we may employ in the distribution of
proceeds. Nor yet can we. render such a
practice ineffective to those who desire to
indulge. As matters stand at present
the temptation is there, and perhaps it is
not always resisted. There 'is, however
an easy method of detecting such fraud
and there is a remedy. '
In regard to statements of Prof. Van
Slyke they do not bear the impress of a
very h"gh authority. And so far as any
mere statement concerned, unless sup-
ported hy scientific fact, it is not- well to
accept it as a truth. \Vhen the Professor
attempts to prove his assertions by means
of figures, he makes a Slyke statement,
not calculated to enlighten to any extent
the majority' of patrons.
He tacitly admits that to get results in
closest agreement with the yield and
composition of cheese, it is correct to add
to the percent of fat. Why! He 'states
that this result is obtained by
the addition of the factor 0.3.,
Now certainly if the correct result is
obtained without the addition of any
factor, then the addition 'of the smallest
possible factor would give the next best
result. This factor would not be 0.3.
He further states that the addition of
the quantity too, makes a difference in
favor of the poorer milk, six times as
great as it should be. Such a statement
coming from high authority is remark-
able. Taking samples of milk tostingb
4, 3 per cent respectively, of an average
value of 72 cents per.100 lbs., we llnd the
tindividual values would stand thus: By
the fat 90, 72, 54 cents; by the addition of
two 84, 72, 60 cents, and by the addition of
0-3, 88.7, 72, 55.8 cents per 1(I) lbs. Now
take note that 3 per cent milk, being the
poorer, has an advantage by the Fat
Casein plan, over the 0.3 plan of 4.7 cents.
This difference is said to be six times as
great as the difference-1.3 cents-he
tween the value by the fat plan and that
of the 0.3 plan. Then we find that 1.3 x 6
-4.7 by Prof.. Van. Slyke. I think there
is something wrong with the' Prof. Cer-
tainly the equation does not look hearty.
I trust Mr. Jenkins is not _a proselyte of
the New York doctrine.
