I The expected opening of the Dona* ina Canal in 1914 stimulates our in- terest in the inhabitants of Panama and Columbia until its succession from that Republic in 1903, and both countries have been peopled and ruled by Spain. ‘ Like Columbia, Panama. has many varieties of climate, from the MODI- cal heat of the plains to the cold of the mountains. Fruits of the tem- perate zone flourish on the high lands while the tropical vegetation below is luxurlant. On many of the trees -orange, lemon, banana, and others ,--green and ripe 'fruit and budding 'flowers may be seen together, be- cause lt is .almost perpetual sum- mer. One of the fruits is the rose apple, and another luscious fruit is the sapodilla, which grows on a tall tree. The aguacate orfslligator pear is much used in salads. Among the beverages of theiricb are naranjada, -orange, lemon, banana, and others grapes, and orchads, which contains almond juice and sugar. _The dinners of the rich, and the breakfasts also, have many courses;` the tables are spread with fine linen, and set with silver, cut-glass, and china. The meals of the poor are very frugal. Families may be seen sitting on the grass in front of their cabins, dining under spreading trees_ The Indians and Spanish natives make pottery from clay, use' gourds for cups, and cut them to shape to take the place of svoons and knives. A favorite dish of the poor is a stew called, sin coche which contains a variety of ingredients. Rice is a standby. Rice and red beans are cooked together, and rice is also cooked in lard with tasado-dried beef. The flesh of the lspd lizard, called lguano, fs said to repemble chicken.
