He also read a letter from Mr. Hick- sou, Secretary of the Grand Trunk Ra. lway, granting free passes over the Railway, to Delegates to the Convention at Detroit. A discussion then followed as to the best steps to be taken, in the absence of a Cham- ber of Commerce, for the ay pointm nt of Delegates for this Island, during which dif- ferent opinions were expressed. Breeken, Esq., spoke in favor of their ap- pointment by the Government, and the de- fraying of their expenses by the Legis!«ture, as the ome mee gy well as the Co:mmer- cial interests of the wholeColony were involved in the important question of the Convention. Hon. Messrs. T. H. Haviland, J. C. Pope, D. Laird, B. Davies, Esq., and others, were opposed to the Government ‘have anything whateyer to do with the subject, o the grounds that the Convention was purely Commercial, and that the invitation, cman- ating from the Detroit Board of Tracie, was addressed to the respective Boards of Trade or Chambers of Commerce throughout the Coionies, and not to Governments; and also that in the other Colonies no Delegates had been appointed by Government. 3.5. Carvell, Esq., then moved the follow- ing resolution, seconded by B. Davies, Esq.: Kesouven, That in order to the earryin.s out of the foregoing Resolution, it is expedient that a Chamber of Commerce be constituted. Which was unanimously carried. The meeting was also addressed by the Ilon. Messrs. J. Longworth, A. A. Me}onald, ot Georgetown, and F. Brecken, Charles Palmer and H. BREMNER, Printer, Book-binder, AND STEREOTYPER, Horer Prornisrors, Pustisaep in Guryer's Progressive Acre, Cricaco, Itt. — We, the undersigned, present by invitation, yesterday, to witness the eperation and working of the new prineiple of gas used for cooking purposes, were present during a series of experiments, in our view fully calling out the utility of these Stoves. As the result of actual experiment the following was performed :— Beefstake was cooked in fonr minntes, its juices and flavor retained ; and, further, the claim of the inventor abundantly sustained, by this process tough meat is rendered tender and delicious, Quail were, in two iustances, broiled in five minutes. and that to a turn. Bread cut fresh from the new loaf was delicately browned in two minutes. In each case these viands would be pronounced deliciously aud thoroughly cooked. In the case of the meats, the exterior surfaces were coagulated and rendered firm; the substance of the whole, whenfecooked, retaining their juices and flavor. In neither nor any case was there the fuintest perceptible flavor or odor of gas in or abont the Stoves, or in the food when cooked. We regard the process as entirely superior and successful. The cost of cooking by this method we append as made up from careful tests yesterday, accepted bat not tried: 12} lbs. bread cooked in 42 minutes, consuming 4 cubic feet of gas, cost 1 cent. 2 Ibs. steak broiled in 5 minutes, consuming 4 of a enbie foot of gas, cost } of acent. 1 quart waiter boiled in 93 minutes, consuming I cubic foot of gas, cost }of Lcent. 24 breakfast biscuit baked in 12 min- utes, consuming I foot of gas, cost 24 mills. Having frequently examined the mode of action of SHaw’sSrKak-Broiver, I have been led to the conelusion that the tissues and integuments of vongh meat are ruptured and broken through the effect of highly heated, even red hot steam, of which this gas-flame is highly composed. At the first instant this steam penetrates and sealds the meat, and the subsequent browning retains a por- tion of the water formed, with the juices produced. The gas-flame, as obtained in the devices of Mr. Shaw, is the purest flame which art affords; and there is nothing present, as vapor of gas, which can give odor to, or any way interfere with the production of the delicions flavour of broiled meat. This apparatus secures tae greatest economy of time in eooking steaks; it renders the toughest meat more tender than in any other mode of broil- ing it, and, with the simple noting of time, enables the cook to produce with certainty any gradation of effect. Suaw.—The Gas Cooking-Range and the Gas Heating-Stoves of your ivvention, which I have used the past four years, I can unhesitatingly say have given me perfect satisfaction ; and I can contidentially recommend them, as I have found them, to be the most economical and convenient cooking and heating apparatus I have ever met with. In the Gas Cooking Range, the quality of the food is most surprisingly improved. The juices of not appear to lose any ofthe weight. Inthe course of a season, this saving amovunts to quite an item in the economy of this mode of cooking, asit is a well known fact that meats lose much of their weight when cooked in the ner nd coal range oven. The fatigue and exhaustion occasioned by many hours spent at the ironing-table, in a room heated to the ordinary temperature, is all spared by using your stove, which heats the irons quickly, and leaves a comfortable room.
