Juice elm CllOIJDM seeded raisin: -2 cup chopped dates 1-2 cup chopped cftron 3-4 cup candied cherries, halved 1 1-2 cups chopped nuts METHOD: Cream the butter, and Erlidllllliy cream in the sugar, Add 1 egg eta time, and beat the mix- ture until fluffy after each addition Sift 1 cup of the flour with the baking Powder, salt, and specs, and add this to the creamed mix- ture alternately with the mat Juice. Mix thdremainlng 1-2 cup flour with the prepared fruit and nuts and add to the cake batter, stirring until well-mated. Pour the batter into the well-drained shells. and you can notch the tops of the shells first if you like. F111 the shells not quite to the tops. The cake-filled shells are now steamed for 2 hours. This may be done by putting water in the bot- tcm of a roastln pan, cover the bot-tom of the pa with a cloth or rack. Set a covered pan contain. 1:18 the filled shells on the rack or cloth. UNBAKED FRUIT CAKE 1-2 pound graham wafer 1 teaspzon cinnamon 1-4 teaspoon nutmeg 1-4, teaspoon cloves 1-4 teaspoon salt. 1 cup heavy cream 1 cup cut marshmallows 1-2 Clllp curtants 1 cup civpped dates 1-2 cup chzp-ped raisins 1-8 cutp choppml mixed peel 1 curp chopped nuts Method: Crush. the graham wafers fine and sfft- over them the spices and the salt. Mix thorough- ly. Add the cut marshmallows to the cream and let stand while pre- paring the fruit. Pcur hot water over the currants, drain. and then dry well between towels. Add these to the rest cf the prepared fruits and lllllfi. and mix well. N- w add the fruits and nuts to the crumb mixture and moisten with the marshmallow-cream mixture. Pack into a squtne tin or mould lined with wax paper and let stand in the refrigerator for at least 12 hours before cutting. Slice thin and serve with or without whipped cream or hard sauce. This makes about a Z-puund loaf. It will keep in the refrigerator f r several weeks.
