It is gratifying to know that that filthy bivalve the oyster, whose proper function ia the world is the consump- tion of the coze and slime which cover the bottom of the ocean and the stems of submarine plants, ts rapidly creating such a bad reputation for itself thas there is already a prospect that its con- sumption as an article of food may bi practically abandoned. Ié bas long been known that the con- sumption of the oyster not infrequently gives rise to severe illmess. A few years ago an eminent surgeon in Chicago died! as the result of consuming a few raw oysters. It is more recently, however, that the fact has been made clear—and it has been established beyond the pos- sibility of a daubt—that the oyster is a common source of epidemics of typhoid fever. The British Medical Journal has been particularly active in making this fact known to the public, as the result of which it iselaimed by the leading oyster companies of Great Britain that there has been a decrease in the con- sumption of oysters amounting to three- fourths—that is, the quantity required to meet the Gemand at the present time is only one-fourth that of three or four years ago. In their anxiety to save their busi- ness from utter ruin the oyster com- pavies have appealed to sanitary au- thorities for relieving suggestions. Professor Herdman of Liverpool comes forward with the suggestion that oys- ters received from foreign parts should, like cattle, be subjected to quarantine for from one to four weeks and also sug- gests that no one should think of con- suming oysters without subjecting them f[ to at least one day’s washing in astream of water runing from atap. It is not claimed, however, that any of these measures will entirely obliterate ty- phoid fever and other poisoning germs, but only to some degree diminish them. The companies are, of course, labor- ing earnestly to recuperate their rapid- ly failing business, and it is according- ly proposed that the government shall appoint oyster inspectors, whose duty it shall be to make careful investigation of the bivalves offered for sale in the English markets—to examine their mouths and look at their tongues, so to speak—and ascertain whether there re- main behind any of the filthy germs which they have been in the habit of swallowiug in the pursuit of their life calling. It must be clear to any one that to provide for the inspection of every oys- ter—the only method by which complete safety could be obtained—~would be al- together too expensive a process, and one which can never be adopted. Con- sequently it is pretty certain that, how- ever successfully the public alarm may be quieted for the time being, it will redevelop sooner or later as the result of new outbreaks, and it is to be ear- nestly boped that tite ultimate result will be the repudiation cf the oyster as an article of diet, the germy bivalve being left alone to pursue unmolested the avocation allotted him by nature.— Dr, J.
