" A physician recoin- mended ine to feed my babe on fresh cow's milk, with the addition of a little soda to prevent acidity! Many make frequent use of it to prevent or cure acidity of the sto- mach. Shall we away with it entirely? I have been convinced theoretically—but the “sa- heratus jar” stands on the pantry shelf- (husband sa s, not to be filled again.) ‘ ‘Ac- cidents will appen in the best of families." Now and then the risin dough stands a little too long, and we ear the saccharine fermentation has assed, and the acetcus will develope itsellyin the process of baking. A little saheratus is then very convenient. Or when stranger guests are present, a little insures the tenderness and putfness of “ muflins,” or “ pancakes.” and “ cup ” or “sponge cake,” when perhaps any fai- lure even in the appearance of an article would do discredit to our culinary profici- ency. As for bread however, there is sel- dom need of any alkali in its composition. Of biscuits, the best are light rolls, waf- fles and muflins, if people require, hot cakes may be brought to a proper degree of perfection with yeast. Then there are puddings, buns, rusks, loaf-cake and gin- gerbread sre raised in the same way. Will not some of our housewives who aim at perfection in this one particular and laudable sphere, give us some of their ex- perience on this head? . She commenced lenkin badly, and it was deemed advisable for the safety of the passengers, mails and treasures to run the ship ashore, which was accordingly done.
