I refer to the inferior quality of much of the Island cheese made during the past season. The buyers do not hesitate to say that much D l 0 and the iesult of the competition at St. 0 | ho John and Halifax and the low scores at of it was not up to the usual standard the Ch.xrlottetown Exhibition confirm their statements. The , present state of affairs seems to have been brought about by carelessness, or want of skill on the part of some of the makers, and on the patrons part by some of them allowing their cows to have access to unsuitable foods and by careless and improper handling of the milk before it was de- livered to the factory. Now, the makers being few in number compared with the patrons it is easier to reach them and apply a remedy as some factories have done by making them pay part of the loss that could be clearly traced to them. In regard to the patrons the matter is much more difficult, as although they must in the end belthe greatest losers it is hard to bring the fact home to them. The makers also have the advantage of an instructor to advise them and although the patrons are taxed to provide nn instructor for the makers, there has been no effort made to educate and instruct the patron. \Ve have a Dairy Association whose object is the encouragement of dairying, but apart from levying a tax on the patrons for the purpose of paying an instructor who devotes all his time to the makers, it is hard to see what benefit it is to the dairymen as it is at present managed. It does not appearto be a sound business way of improving the quality of our cheeseto send a man to try and help the makers tomakeafair quality of cheese out of milk some of which, when delivered at the factory is unfit for the purpose, while we totally neglect the sources from which the milk comes.
