If the animal is si;1’l'cring from a specific infectious disease, such as tuberculosis, lnthrax, foot and mouth disease, or other cattle diseases, the bacteria causing these diseases are able -to find their way from the animal body through the tissues into the udder. While milk from such animals is utterly unfit for consumption, as it imperils the health and life of the consumer, its dangerous eflccts may bc overcome in ease of tuberculosis by properly pas- teurlaing the milk. In the ease of anthrax. however, the germs are very resistant and heating the milk to the boiling point will not destroy them. Fortunately, the milk secretion in ani- mals suffering from anthrax decreases rapidly and ceases completely after a few days; the milk takes on a yello\v, viscld appearance. The foot and mouth disease, which is causing enor- mous loss of cattle in European c0un~ tries, has, thanks to the rigid enforce- ment cf our quarantine laws, so far successfully been kept from the herds of this country. hence an infection of milk from this source is much lcss lia- ble to occur. In healthy animals the only possible channel of bacterial invasion is the tent. The teat is a canal surrounded 'oy muscular walls and closed at the extremity by an involuntary sphincter muscle, which varies much in contrac- lilit: in different animals. Oitcn it ij i I so lox that the pressure of a small amount of milk in the canal is suf- llcient to_open it and the animal leaks her milk. ln other animals, it re- quires a strong eliort on the part of the inilker to draw the milk. 'lhis zanul, with a temperature of the sni- znal body, and containing always, even after the most complete milking, a small amount of milk, offers ideal conditions lor bacterial growth. When the ani- 1 mal lies down. be it on the pasture or in the stable, the udder and tests come I in contact with dust and dirt, which src teeming with bacteria. It seems, then, reasonable to conclude that inl case of leaky udders thc bacteria adher- ing to the exterior of the teat have easy access to the interior, where they meet ‘_ most favorable conditions for rapid de- velopment. This assumption is borne out by the results of many investiga- tions, which invariably show that cows with leaky udders harbor a very large number of bacteria in the milk. For this reason, such cows _are,_discarded from the herd in some saiiitary, dairies. On the other hand, where the -sphincter muscles close the teal; iirrnl_v,__the hae- terial invasion is greatly cbeckéd. From what has been said'-above it may clearly bc seen that, if cows are allowed to v.'ada- in swamps covered with stagnant water. or lie .down on dirty, iilthy stable floors which are cov- ered with exe:-25:1, etc., the chances are that a comparatively large number of bacteria will be able to enter the udder through the tests, a fact which is es- ecially true ln the case of cows that iieak their milk.
