A feature of the new building la the provision for adequate re- frigeration facilities for the butter the creamer-y mskel. and individ- ual refrigeration lockers for three hundred creamery patrons where they can store such foods as meats. fruits and vegetables for their home use. The building which WlII be ready for use some time early next year la 99 feet. long by 53 feet wide with e 13 foot wall. The butter storage room and the lock- er room will be kept. at zero and the pre-ooollng rooms for each of them at 34 degrees. The locker pro-cooler also contains a fast freeze unit. capable of freezing 800 lbs. of meat, fruits or vegetables each 24 hours. It Wlll produce a temperature of ten degrees below zero. The butter storage room will povide refrigeration capacity for 125,000 pounds of butter which is about 2.250 boxes. This is more than hall’ the quantity which was manufactured in the creamety in 1947 and close to half of the es- timated 260,000 lbs. or slightly more than will have been made in 1948 when the year closes a little more than a month from now. The plant is on a high elevation and is excellently adapted to pro- vlde good drainage facilities. The building is of frame construction with insul brick siding. The floors are all concrete. Present plans call for a vertical steam boiler of the tubeless type for production of steam and hot water for process- ing the butter and heating the plant. Water will be furnished by a deep well - 212 feet - with a capacity of 2.000 gallons per hour. It is located in the compressor room which will also contain the pump and water pressure system and four refrigerating compressor units. T. W. Cope, general manager of the firm. is in charge of the erect- ton and installation of the equip- ment. All local labor is being uused and the job foreman ls Garfield Gamble. When the Crapaud plant is coin- pleted it will be the third co-op- eratlvely owned " and managed creamery in the Province to have installed modern refrigeration equipment. The new one complet- ed earlier this year at. Morel] has this type of equipment and the creamer-y at North Wiltshire has also modernized its equipment. B. F. Hunter, R.O. .
