This is for fowls of three or four years old. When the fowl is a year old the French have another way, which is also very successful, and as age improves the flavour of chick- ens and at the same time makes them much lower in price, the house- wife does well to turn her attention from broilers to “chickens of a larger growth.” The yeailing is to be prop- erly skewered and stuffed, wrapped in a double thickness of soft paper, well secured, and half an hour longer al- lowed for the cooking on account of the wrapping. After cooking for three-quarters of an hour the paper is to be removed and the uncovered chicken basted and browned for half an hour longer. EMILY FORD.
