How They Are Prepared Scientifically For Their Werk, The cut here given shows the students of an up to date dairy school at work in the milkroom. They are rumming hand separators and parting the milk from the cream in fine style, and quickly. We give the picture here for one purpose. It is to call attention of dairymen and creamery meu eve rywhere to the costume worn by these students. The course is much the same in the schools. They are also taught to make good butter by setting the milk in cans aud paus in accordance with the oldcr methods. In the laboratory the students are taught to determine the amount of but- ter fat with accuracy in « given sample of milk or butter and to detect whethe: milk has been skimmed or watered. In stock judging they are tanzht to determine ata glance the common char- acteristics of a good dairy cow; in feed- ing, to prepare rations according te the best authorities and are given hints and suggestions reyarding taking care of dairy cows in general; in breeding, to select good stock and bread to increase the characteristics of the dairy type; in agricultural physics, to draft dairy barns and silos, so as to have them convenient aud especially adapted for dairy use. They are also taught to run wind- mills, steam aud gasoline engines, tread powers and ail farm motors, so as to be able to attach them to and run cream { separators, pumps, feed mills, churns, turaslers, etc. Ice In Cream, It has been our opinion for many Years that it is better not to put ice in- to cream if it can be avoided, but if it needs cooling to do so with a vibrating cooler, through the pipes of which cold water runs. We do not know that the per cent of fat in the cream has much to do with the quality of the butter, but we know this—there is less loss in churning rich cream and churning at as low a tem- perature as it will churn than in churn. ing poorer cream which must be churned ata higher temperature.
