Now that our people are seriously beginning to consider the production of the highest quality of pork, both for home consumption and export, they are turning with considerable interest to the Tamworth pigs. The following standard of excellence for ‘Tamworths adopted by the National Pig Breeders Association of Great Britain and form- ulated witha view to the production et the highest quality of bacon : Color—Golden red hair in a fresh colored skin, tree from black. Head—Fairly long ; snout moderate ly long and quite straight :face slightly dished wide hetween ears. Ears—rather large, with fine fringe ; carriage rigid and inclined slightly tor ward. Neck—fairly long and muscular, es pecially in boar. Chest— Wide and deep. Shoulders—Fine slanting and well set. Legs—Long and shapely, with plenty cf bone, and set well outside of body. Pasterns—Strong and sloping. Feet—-Strong and fair size. Back—Long and straight. Loin—Long*and broad. Tail—Set on high and well tasseled. Sides— Long and deep. Ribs—Well sprung and extending well up the flank. Belly—Deep, with straight under-— line. Flank—-Full and well let down. Quarters—Long, wide, and straight from tip to tail. Hams—Broad and full, well let down to hocks. Coat—abundant, long, straight, and fine. Action—Firm and free ; spirited. Objections—Black hair, very light or ginger hair, curly coat, coarse mane, black spots on skin, slouch or drooping ears, short or turned up snout, heavy shoulders, blocky build, small heart girth, elephantness, wrink- led skin, inoent knees, hollowness at back of shoulder. Size of Eggs. The grade of egg which is in good demand is one weighing 15 pounds per great hundred, that is 15 pounds per 10 dozens, which is equal to 2 ounces peregg, or 1% pound per dozen. A small quantity imported in- to Great Britain from France go as high as 17 pounds per great hundred For every % pound which eggs weigh less than 15 pounds per great hundred the value is lessened by about one cent per dozen. One egg shipper of great experience, in Canada informs me that he has found the albumen in large eggs to be thicker than that in small eggs. Another says that in his experience, 90 per cent of the stale or bad eggs, have been small eggs with white shells. , Eggs should be graded as to size. A higher value will be ob- tained for a given quantity of eggs graded into three sizes, large, medium and small, than if they are sent with the sizes mixed promiscuously.— Prof. Robertson’s Report. Apple shipments from Nova Scotia are reported to have reached so far this year 264,000 barrels and an esti mated number of 85,000 more _ barrels to go. These have netted shippers $2.50 to $2.75 per barrel. As prices look like continuing at least as good as at present this would mean that the whole crop would be worth some $622,000 to the province.
