Snip the rind into tiny bills. the" measure it. Cover with cold water and bring to a boil, then drain away the water. Repeat this ‘three times, then drain thoroughly and add the brown sugar. The heat of the orange rind will partly dis- solve this. Cream the butter and the white sugar, then add the-orange rind and brown sugar . Add the well beaten eggs and the salt. Sift the flour and baking powder and add alternately with the milk. ‘Turn into a well greased loaf pan and bake in a rather slow. 325 deg. F. oven for about 1 hour. Cool before slicing. If you like the flavor of orange, you'll like these orange slices, which are really a gumdrop cookie. You use those orange gumdrops which look like a sec- tion of orange and you need 14 of them. Orange Slices 4 eggs ‘ 2 1-2 cups brown sugar 2 cups flour 3-4 teaspoon salt 14 candy orange slices 1 cup chopped nuts _ Method: Beat the eggs until light, then add the sugar and beat: until it is dissolved. Sift the flour with the salt and stir this in, then add the orange slices, which have been cut: in small pieces. Reserve a little of the flour to sprinkle over them so they won't stick to- gether. Add the chopped nuts and spread in a shallow pan which has been lined with waxed paper or greased Very thoroughly. Bake in a moderate, 350 deg. F. oven, then cut in squares 11nd roll each square in icing sugar. These are nice and fruity tasting. We can't stop without including a rather unusual souffle which is just the thing for lunch or for dinner these warm days.
