I sometimes find -cans-with a seam up the side and by taking a. pencil I get the real sour whey out of this seam. I always get the ripe milk in such cans. _ ~ MAKER N0. 10. The outstanding difficulty is over ripe milk and dirty cans, and the way to overcome that would be clean and cool milk. MAKER N0. 11. Over ripe and gas- sy milk, caused by not straining the milk and cooling it and leaving the covers off the cans over night. I would recommend an inspector or inspec- ors to look after the milk producers until this trouble is overcome. Until milk is delivered in better condition it is impossible to make iinest quality of cheese, especially in large factories. The replies from the eleven makers all agree on the chief dliilculty in making finest cheese OVER-RIPE AND GASSY MILK. Wlio is res- ponsible for this and how is it to be remedied? The cheese makers and boards of directors are responsible. The average pa'ron ' will follow the course of least uesistance and l-f his milk is a bit oil today and gets by at the weight stand, the chances are it will be worse tomorrow. , 'The boards ot directors have got to let it be understood that over ripe and gassy milk will not be taken _then it is up to the cheese maker to take a grip of things and see the rule is strictly enforced at the weight stand. Those results encouraged more of the patrons to join the good practice and they hired the maker and paid him $1.00 per day for one month to make up all milk separately, which was delivered to the factory cooled down to 60 degrees. The work began July 18th and con- tinued untll August 19th. They de- livered 53,806 lbe. ordinary milk, which made 4,656 lbs. cheese, and took an average of 11.03. They delivered 144,430 lbs. cooled milk, which made 13,093 lbs. cheese took an average of 11.55 per pound cheese. ` The cooled milk net the farmers 4c per hunderd weight more than the or- dinary milk and the percentage of but.- ter fat was practically the same in ii e ch lot.
