Now of course we do not claim that either the rose-geranium leaves or the mint, will give these btauti- fui tints to the jellies; we have to add color to our mixture. But that is easily done. because there are plfle food coloring; on the market today that. have no effect. on fla- vor or texture and can be addedio gny kind o1 food mixture; with rose coloring and green, we Cell give these characteristic jellies the color that sets them off to perfec- tion. ' Another modern aid that; 1S at our disposal for the making oi old- fashioncd jellies by an easy method that is distinctly new. lies in the fact that we use commercial pectin to stiffen the flavorful mixture- for there is none of the necessary jelly-making substance that . called pectin, in our geranium or mint leaves.
