T¢ Bone a Ham.—Soak the ham all nighs in tepid water. In the morning put t inte the ham boiler, after clean~ ing nad scraping it free from mold, add warm water, not hot, set over the fire and bring slowly to the boiling point, keep it gent ly simmeviag, not boiling hard till perfectly tender, then lay it on a plat tor or wooden t.ay wll cool, when all the bones must be car ‘efully removed. Cut it clear round ihe heck, and |eosen the bone from the ohiok part with @ thin, sharp boning knife and ped] | out pil the bones with great care. Thea | pres che meat into shape, tie itina clean cloth and return to the beiling liquor. Take the pot from the fire sand leave the ham in the liquor till thoroughly cold, and then when ready for use cut it across like beef’s tongue. A “young friend” inquires if fish for boil ag should be put into het or cald water, and how one can tell when it is cooked enough.—All fresh fish or meat sheuld be put inte boiling water ; salt fisa or meat into cold water. Wet two tablespooniuls of flour to a sriooth paste and stir inte the broth until it thickens. Beat up we eggs, if plenty, and svirinthe last thing; then pour ‘this sauce over the tongue and serve.
