The bnttei-fat has a slight flavour which is much more pieceptibie in the milk of fresh-caltied cows, than in the milk of those which have been milking for more than six months. The action of these low forms of life oil. milk or cream is fermentation; and they produce :i flavour and cdour, in other words tt taste and smell, peculiar to themselves. It the atmosphere of ti stab e or dairy building sme.ls offensive, then the strong probability is that the minute forms of life present in the at- mosphere wiil produce similiar offensive smells in the dairy products made from the milk or cream exposed to it. .On the other hand, if the atmos- phere of the dairy building has an agree- able smell, the butter or cheese' made from milk or cream or milk exposed in it, will likely have a flavour and odour which are agreeable. In casts ". here bacteria, which become the causes oi such undesirable odours and flavours, have contamii ated the milk or cream, the practice if pasteurizing it can be adopted with advantage. As an instance ot what has already resulttd largely from the cold storage service, which was provided in even a primitive way on steamships for the Season of 1895, it may be cited that the total ex- , ports ol' butter from Moutrt-al during the season of navigatirn, have been as follows :- l89l 32,055 packages. ' 1895 65.66-i ‘~ 1896 107.321 “ lS97 220,200 ‘- Another iristance may be cited. In the autumn ot 1897, ti shipper' of apples lrotn western Ontario divided tt lot of 592 barrels into two shipments. The apples were reported to me to be of the siirne varieties, ot the same sort and all prickitl iii the same vtziy at the same time. One shipiiiect of QQ? barrels was foiwardtd in cold storage, they were reported to be landed all in gcod condition and were sold at 18 shillings per barrel. The other part of :he lot containing 325 burr els was sent without cold storage; 205 barrels of them were reported as landing in ti. slack or wet condition. The whole lot was sold at an average of 8 shillings per barrel. In the former case when the apples were sent in cold storage. none of them were reported as arriving slick or wet. whereas in the latter case no less than 63 per cent were reported as arriving in a damaged condition. The apples were early fall varieties, and were tor- waided in the autumn to Glasgow and Liverpool.
