This is a Scandinavian trick that seems to enhance the ten- derness and flavor of the beef. and makes practical—nutrition ally speaking—the use of 1/4 pound less meat than usual. The mashed potato edging the beef pie needs 1 cup milk. and the pudding for dessert uses 2 cups. The amount of milk used in preparing this meal is 5 cups (over a quart) which is eaten. This does not include the cheese used with coffee or tea. It is a normal part: of the regular food bill. not an extra cost. to be worried about.
