To Fry Chickens.—Cat up the chickens antl season them with salt and cayenne | pepper roll them in flour, and fry them in | hot lard: when the whole are fried, pour) off the lard, and put in 4 lb butter one tea- cupful cream, a little flour, and some scalded parsley chopped fine for the sauce. Jounsy Cake—One quart buttermilk one teacupful flour, two-thirds teacupful molasses, a little salt, one teaspoonful saleratus, one egg, beaten; leave it so thin that it will almost run ; bake in a tin. If it is not light it will be because it is made too thick. Tomato Catsup.—-To one gallon of tomatees put halfa gallon of good vine~ gar, two tablespoonfuls red pepper, four tablespoonfuls of black pepper,a little salt, one tublespoonful powder cloves, one grated autmeg; boil until very thick, then strain it and add halfa pound of sugar; bottle and shake every morning for seven days, Baxrp Prars.—Peel and bake ripe pears with but little water. When cold, cover the top and sides with a cake-icing flavored with vanilla, and served with cream and sugar. ‘This makes a delicate and hea!thtul dessert,*nnd but little time is consumed in its preparation. ‘Tart apples may be baked in the same way and are preferred by many. Aprce Custarp Pir.—Seald the milk aud let it cool; grate seme sweet apples ; to each cupfuL of apples two-thirds cupful powder sugar, four well beaten eggs, one-~ cupful milk, one-fourth of anutmeyg ; line an eartheo pie dish with a rich crust. and Jet it bake; then fill with the custard and let it buke for halt an héur. To be eaten cold, Eaa PLANT.—Peel and cut into thin slices ; souk 10 salt aud water ten minutes ; drainaod steam five minutes. Make a batter of one pint of sweet milk, two beaten eggs, one-third cup of melted but- ter, one heaping teaspoontui of buking powder and flower, to make butter as tor piucukes ; dip the slice into this, and fry in butter until light brown. GREEN ToMATo Soy.—Slice two gal- lons of creen tomatoes and twelve or tour- teen good-sized onions ; two quarts Vine- gar, oue pound sugar, two tablespoonfuls salt, two of ground mustard, two of black pepper, one tablespoonful alspice, one of cloves. Mix and stew until tender, stir- ring often lest they shouid scorch. Put up in small glass jars. * This is very nice’ for most every kind meat and fish. Hyarentc Custarp Piz.—Two tablo- spooniv.3 of Graham flour, one of corn starch, stirred smoothly into ove half pint of milk, one tablespooutul of sugar and a little lemon juice. Stir all together, and pour into a well-buttered ; late or pie-tin, and bake in a quick oven. ‘The flour will settle to the bottom and form a fine crust without shortening. How to Tell that Eggs are Bggs. A good egg will sink in water. A boiled egg which is done will dry quiekly on the shell when taken from the kettle. The boiled eggs which adhere to the shells are fresh laid. After the egg is laid a day or wore, the shel! comes off easily when boiled. A fresh egg has a lime-like surface to its shell. Stale egys are glassy and “smooth of shell. Eggs which have been packed in lime look stained and show the action of the lime on the surface. Eggs packed in bran for a long time smell and taste musty. With the aid of the hands or a piece of paper rolled in funnel-shape and held to- ward the light, the human eye can look through an egg, shell and all. If the egg is clear and golden in appear- adee when held to the ligit, it is good, if dark or spotted, it is bad. The badness of an egy can sometimes be told by shaking it near the jolcer’s ear. The following story is told of Professor Blackie :—On the door of the Greek class room in the Edinburgh University the Pro- fessor had, or took occasion a few weeks ago, to pat up this notice :—‘‘Professor Blackie regrets he is unable to-day to meet his classes.” A waggish student, spying this, scraped out the initial letter of the last word of the sentence and made it ap- pear as if the Professor was regretful at his mnability to meet these fair specimens of humanity familiarly known outside the col- lege quadrangle as the ‘‘lasses.”” But who cau joke with Blackie, and not get the worst of it?
