I know that from years of experience, ‘The conversation turned to the sub ject of carving-knives, andthe veteran said that “carvers were harder to keep in order than the ordinary table knives, because the one who carves Goes not make use of the stecl as should. “It may be an ecid in the beef, or it may be the moisture, or the heat, something about hot roast beet that takes the edge off a knite, and makes it rip where it should cut, and the faci that tha knife is not affected that way by mutton or ham makes me that the dullness is a_ result of action of beef ingredients blade. This view was confirmed by the pro- prietor, who said: “I have handled carving knives asa manufacturer and at my table for many years, and I know that the best knives wall not cut properly when used on hot roast beef unless the steei is used atter every few cuts. The steel need not be rough as some people imagine; in fact, a well-worn steel is better than one “with a rough surfaoe, and a few passes “over the on the The man whorubs and a carving knife for five minutes and thinks that he has it allright and may send the steel away, makes a great mistake. He shoula keep the steel handy, and rasp the knife over it light | ly a few times after every cut or two. |And even then he will accomplish nothing unless he knows how to use the two instruments. A carver must be ‘held at-an angle of twenty-five degrees | on the steel. One must be careful to | have the angle the same on both sides, otherwise the knife will be made dull instead of sharp. The knife should be drawn on the steel from heel to point against the edge, and the pressure should be very light. Cutlers have certain rules for sharp- ening razors, pocket knives, etc., as well as carving knives. A razor must be laid flat on the hone, because it is | hollow ground{and requires a fine edge But a pocket knife requires a stiff edge and the moment you lay it flaton a stone, soas to touch the polished side, you injure the edge. It must be hele at an angle of twenty to twenty- tive degrees, and have ar edge similar to a chisel. Charlotte Bronte Not Ficttere? An interesting anecdote of Charivite Bronte is recalled by Mrs. Humphry Ward in her biographical introduction to “Vilette.” In 1851 the authoruss, having refused repeated invitations to London, on the ground that having done no work she deserved no treat, finally consented .to pay a short visit to the family of her friend and pub- lisher, Mr. George Smith. Thackeray was at this time at the » height of his popularity in London, and Miss Bronte arrived in time to hear his second lecture on the English hu- morists. When it was over, Thackeray, who had recognized the timid little woman sitting by Mrs. Smith, came down from the platform, and, shaking hands with Miss Bronte, asked her how she liked it. There are few persons whe would not have been flattered by such an attention, but Miss Bronte, on the contrary, was almost offended by it, and when she introduces a similar in- cident in “Vilette” she comments on the restlessness and the lack of de- sirable self control on the part of the lecturer. The Cossacks would pick up children barely old enough to walk, hold them by the ankles, and beat out their brains on the pavement, Russian officers looked on without protest. The experience of Mr. Blackweli is similar to that of many sufferers with cbronic indigestion. Stomach medicines will seldom really cure indigestion.
