We find many ways in which skim-milk is being used profitably, and that for some purpose it is as nutritive and useful as the whole-milk itself. This is mainly due to its freshness and sweetness in centrifugal separation since in gravity setting the bacterial growth in skim-milk develops rapidly and the milk sugar, whichis an ex-— tremely nutritious ingredient in_ its natural state, changes into an acid which is harmful rather than beneficial to both the animal and human stomach.
