In and below the various rapids, in which position they are suffered to remain trom six to twenty-four hours. They are then care- tully raised out of the water, turn wool side downward into a batea (tub) of water, end thoroughly washed; the gold falling from the wool of the skin is tinally collected trom the bottom of the batea. To keep beef in warm weather.—One hundred pounds of meat, bones removed, Six quarts of salt, four pounds of sugar, two ouncas saltpetre, four saleratus. Put a layer of meat and then a layer of pickle ; it will make its own brioe. Cover the top with cloth. To cook rice.—In the first place a tin pail with a cover. Putin this one cupful of .vice, one-cupfal of raisins, three pints of milk(if you have it), if not, put water anda litle salt, Put the pail in a kettle partly filled with water, and boil till the rice is soft. It needs no attention, exeeptto keep the water boiiing. This is a good way to cook oatmeal, corn grists, &c. Cherry Jelly.—Stone and steam a quantity of the best of cherries. To every four pounds of cherries add one pound of the best of red currants. Put these fruits into a copper preserving pan, place over the fire, and reduce all to a mash. Keep stirring all the while with a weoden spatula. Now strain, press through a hair sieve, and filter through a jelly bag. To each pound of fruit add three-quarters of a pound of sugar. On aceount of the currants you use in this instance increase the sugar to pound for pound if your taste so suggests. Now place again on the fire and boil toa jelly. Remove the scum and fill the glasses or jars. When cold cover the tops with brandied paper.
