So early as 1725 Benjamin Franklin,the practical philosopher, whenjworking as a printer in Londou, drank water, and tried to convince a fellow- i workman that the bodily strength could | only be in proportion to the grain or flour of the barley disolved in the water of which it was made; that there was wore flou> in a pennyworth of bread; and there. fore. that if he would eat it with a pint of } waterit would give him more strength thar a quart of beer. Liebig, the great chemist, years afterwards made a similar Statement, which has been proved and demonstrated times without number. Many people entertain the notion that as beer is made out of barley, it must be nutritious, not aware that nearly al! the nutriment is wasted in the process of brewing. It is a mistake to suppose that beer is ‘liquid bread,’ and that fermenta~ tion resembles the process of cooking, Cooking makes no change io the substance cooked, bu: simply renders them more easilydigested; but brewing alters the very constitution of the barley, involves a vast waste of food, and out of nutritious grain manufactures a poisonous beverage. There is, besides, the testimony of the most distinguished medical mea that even moderate indulgence in_ intoxicating liquors is injurious to health. In 1847,a medical declaration signed by upwards of two thousand physicions and surgeons engaged in every braach of the profession, testified ‘that total and universal abstin- ence from alcoholic liquors and beverages of all sorts would greatly con- tribute to tae health, the prosperity, the morality and the bappiness of the human race. Im more recent times we have the individual testimovies of Sir Henry Thompson, the late Sir William Gull, and the late Sir B. W. Ricbardeon, that indulgence in alcoholic beverages in quantities deemed moderate is injurious ‘to health. Sir William Gull, when giving evidence before the Select Com- mittee ofthe House of Lords in July, 1877, said, “There is a great deal of injury done to health by the habitual use of wines in their various kinds, and alco~ hol imite various shapes, even in s0- called moderate quantities, and that to people who are not in the least intem-~ perate. Above all there isthe danger of many following the example set by people who driok, which leads many into temptation, and finally into habits of drunkenness, which ought to weigh with ali who desire the highest welfare of the people, and especially with ministers of religion.— League Journal.
