I don't believe in, the rule of thumb myself—theoretically. Practically, 1 put - the quantities so often that now I do it mechanically, which is really not the rule of thumb after all. Well. say, to these two round pies in the jelly cake tins you see, three cups of flour, three very small spoons of baking powder, a teaspoon of salt, and about half ac up of lard, or lard and butter mixed. Make that in- to a soft dough with as little handling as possible—I mix with a knife always —divide it into four equal parts and try to roll out as near the shape and size of the plate as possible so as to have nothing left. The dough is best rather thick. Then take a pound of round steak which has been chopped at the butcher’s ; season this highly with pepper and salt to taste, and beat it into a stiff sort of batter with water ; if you don’t put the water the meat cakes very hard and 1s not juicy, but don’t usete much water. Put this between two layers of paste, just as you would apples, wetting the edges to stick them, and be sure your oven is pipping hot. I don’t see how anyone could help making it good. But I suppose like Leonards and his painting, you must mix your materials with brains. There is something I forgot to tell you about the rising but per- haps it would not make any difference. Instead of beaking I always use soda and cream of tartar. It’s cheaper than the good baking powders, you don’t need to use as much to the spvonful, and much more wholesome than the cheap ones. Two of cream of tartar and one of soda is the unfailing rule, he soda a trifle scant always. Smooth them together on the board with a little flour ; or, if its cake, dissolve the soda in water. ‘There now, don't you feel awfully wise ? I hate talking shop but you inveigled me into it.
