A WHEN KILLING POULTRY
Grasp the chicken when killing, by
the body part of the skull. Do not
let'the lingers touch the neck. Make
a small cut with a small, sharp-point-
ed knife on the right. side of the roof
of the chickenfs mouth,; just where
the bones of the skull end. Brain for
dry picking by thrusting the knife
through the groove which runs a-
long the middle line of the roof of the
mouth until it touches the ekuii mid-
way between the eyes. Use a knife
which is not more than 2 inches long
M, inch wide, with a thin, flat handle,
a sharp point and ii straight cutting
edge.
At least 32 per cent. of all the
poultry coming ino the market is in-
completely bled. Much of it is so
badly bled that it results in a loss of
2 to 5 cense a pound as compared with
the corresponding poultry which is
well bled and in good order. Aside
from the bad appearance. incompletely
bled chickens have very inferior keep-
ing properties.The flesh loses its firm-
ness sooner, lts iiavor is not so good.
the odor of stale flesh and finally of
putrefaction comes sooner, and in
every way the product is more perish-
able.
A very large proportion of the un-
sightly' poultry in our markets, aside
from the rubbing and tearing of the
skins. is caused by an incomplete re-
moval of the blood. This is evidenced
by red dots which frequently occur
where the feathers have been remov-
ed, especially over thighs and wings,
or by the small veins which mar the
appearance of the neck. Generally it
is the neck which shows most plainly
the presence of blood in the fowl or
or that a wrong method has been used
in cutting the blood vessels in an at-
tempt to empty them. The neck is the
first part to discolor, becoming ilrst
red or purpl'e and finally green. _
