[Special correspondence of Tur Ex- AMINER. | Tuurspay, Dec. 13.—The leading feature of the Exhibition to-day was the judging of the carcasses of the cattleand hogs. The sheep carcasses will be judged tomorrow. The carcasses are judged in the cooling room, and the prizes award- ed tothe best from a consumer’s standpoint. A _ selection is then made which includes the first prize or sweepstakes animal and the poor- that are intermediate. These are run into the lecture room, where they hang in front of the andi- ence, while expert judges point out their good qualities and defects. The first prize beef carcass was con- demned by the butchers as being al- together too fat for Canadian trade. Two of the principal meat dealers in Western Ontario who were lectur- ing on the carcasses said they would give as much for the thin carcass per pound as the fat one simply becouse their customers wanted that kind of meat. Vhere were half-a-dozen carcasses hanging in the lecture room, which ranged from perfection down to the most objectionable type of bacon hog. The first prize carcass was the | result of a cross between a pure | lamworth boar and a high grade Yorkshire sow. The second best was a pure Yorkshire, and the worst --- an altogether nnsuitable anima] for bacon---was a Poland China. A great amount of valuable in- formation was elicited from the packers as to the exact kind of a Carcass they must have in order to put up Wiltshire brand, the high- est brand of Canadian bacon. The bacon hogs shown here show a very small development of fat, not more than an inch in thickness on the | breast. Ve have here gathered great numbers of the very best producers of cattle, sheep and swine on the continent. and one gets the impres- sion in meetiug with them from day today and hearing them discuss stock matters, that Ontario is a great and progressive stock country that already has made agreat suc- cess along all agricultural lines, but oneis also further impressed with the fact these same people wholhave accomplished so much already are sti!l going ahead till they will ‘hard- ly be second to the Old country as acentre of live stock breeding. There has been a very large at- tendance at the show and it will be a financial success. The meeting in the Town Hall last night was one of the largest I ever attemded. The speakers were Pres- ident Mills, of the O. A. C., Hon. John Dryden, Sydney Fisher, Min- ister of Agriculture, and Hon. Mr. Farris, F. L. Haszard and E. B. Elderkin, who spoke for their re- spective provinces. A hearty welcome was tendered ! the visitors to the city by Mayor Nelson.
