We have had fsirly'goo'd success in our fifteen years of Co-operative dairy- lng and are beginning to understand the principles that should govern us, selfishness has no place in true Co- operation. We mustiollow the gold- en rule, and supply all products for shipment of a quality we would wish to buy. True Co-operation considers the welfare of others, sets high ide- als in life and tends to bring into our business the principles of broth- erhood, the great factor inthe evo- lution of the ideal man, the final des- tiny of the race. Mr. Simpson than dealt with the practice of these un- derlying principles and said although we had been fairly successful in llairying, had yet much more to learn before we reach perfection. Our markets are becoming more exacting ln respect to quality, the consumers are getting richer and demand better products. This necessitates the prac- tice of the Golden Rule, the respon- sibility of quality is thrown on exch individual as from the want of care on the part of one all will suffer as the mistake cannot he rectified. Mr. Simpson gave ten commandments for the better management of the dairy business as follows: lst-Thou shalt give 'to the 'milk cows cnly such food as will not taint the milk, so that the butter and cheese may be of a. clean flavor and good quality. 2nd-Thou shalt keep thy milk cows cleanly stabled, where the vei- tilation is good, so that they may be healthy, for milk from unhealthy cows is full of dangerous germs. 3rd-Thou shalt see to it that they have abundance of 'clean water to drink, for stagnant, dirty water con- tains deadly poisons. 4th-Whcn thou shalt guest to milk t-hyl cows thou shalt have clean hands and thou shalt brush all the dust and dirt from oi! their udders, for this is in accord with sanitary science and is exceedingly import- ant. 5th-Thou shalt strain the milk in. to clean cans through two thickness- es of cheese .cloth to take out all the foreign matter that may have got in notwithstanding all your care. 6th--Immediately aft r it is strain- ed thou shalt put the c ns in cold water and lower the temperature to 60 degrees, so that harmful beets;-ia cannot develop in it. -7th-Thou _shalt set thy cans where the air is pure, so omit will not absorb bad odors which can nev- er be .eliminated once they have got in. llth-Thou shalt empty the whey out of the cans as soon as they are returned from the factory and have theml thoroughly washed and scalded and Dut in the sun to dry, and not leave ,them on the milk stand till the next milking time, as the heathen do. 9th-Thou shalt as thou valucst thy life an-d reputation send to the factory the whole milk as it comes from the cow, taking nothing from it and adding nothing thereto, for if thou dost not keep this command- ment thou 'mayest see thy name posted in public places. 10th-Thou shalt, if at all possible, have confidence in the management of the factory and not be suspicious if thy milk does not test quite a; high as thou wouldst like it to, be- cause variations in the test will oc- cur when you cannot see the reason for it, besides the msn who does the testing has no object in doing what is unfair by you.
