ADDRESS—LUAN, EXAMINER OFFICE. Ch’town 19th May 1899 eod ‘3 or TO KEEP EGGS. : ; ; ; TY) ol >P) - Sin,—Havirg received numerous end ries from farmers during the past two months respecting the merits of “*water | vlass” ac a medium in which to keep eggs, | we are ledto think that certain conclu~ }sions drawn from an experiment lately brought te a close with this and other | preservetives will be of interest to your | readers, he investigation was commenced last September, perfectly fresh eggs from the farm poultry bouse being used tor the teat, eh consisted in immersing the eggs fur varving lengths ef time, from a few heu* 't9sX monthe, in (a) limewater, and (b | 10 per cent solution of “water glass. | phose eggs which were treated fora few hours, days or weeks, as the cause might be,, were subsequently placed, togethe | with the untreated eggs to be used as » | check, in a rack within a drawer in thé laboratory till the close of the experiment, | March 30th, 189%. All the eggs wereat a | temperature from 65° to72° F., through out the trial, | The testing consisted in breaking the | eggs inte agiass and noting the appearance of the “white” and yolk, whether the yolk was stuck to the shell, size of air space, odour, etc. Theeggs were then poached and agin the odour, appearence, etc., noted. Without giving im detail the variove trials, itmay suffice for present purposes to surmarize the conclusions reached, as follows :— i ' CONCLUSIONS. 1. In no instance, either of treated or 2. In all cases where the eggs were not kept covered throughoct the peried of the lest with the preservative solution, shrink- age of the contents had taken place, as si,ownby the largerair-space,the lessglobu lar form of the yoik, and in many instances by the adherence of the yolk to the ebell, The eges treated for seven days and less with lime-water showed somewhat jess shrinkage than those treated a similar length of time with silicate of sods. 3. Itwould appear that lim e water and water-glass used continvously are equaliy efficacious in preventing shrinkage. They may aleo be said te give practically the same es regards exteraal aed internal ap. pearances, flavor, etc., of the eggs pre- served. Since “ water~glass” (silicate of soda) is mere costly and more disagreeable to n-e than limé-water, we could not from the present resulta recommend the former as the better preservative. 4 The albumen or “ white” in al] the preserved e)gs was very faintly yellow (though not to the same degree in all che eeg*,) (be tint becoming deeper ou boil- ing. 5. No offenrive oder was to be perceiv- ed from any of tne egg¢ when broken, but 1n all instauces a faint but pecul ar musty or stale odour and flavor developed on poaching. 6. It ts probable that no preservative will prevent the loss of favor possessed by the fresh egg, but those which wholly ex- clade the ar(and thus at the same time prevent shrinkage from evaporation) wl] be the most succes*fal, Coutinnous enbs mergence ia evidentivy better than treate went for a few days. “Water glass,” known chemically as silicate of soda, i+ fluid quoted at 60: per gelloo. It is bighly caustic, due to excees of soda, and consequently is more disagree- alle to use thar lim-s-water. The lime-water may be made by putting 3 pounds of good fresh lime in 5 gallons of water, stirring well! at intervals, tor a few hours and then allowed tu setile The clear superoaiure fluid can then be poured over the eggs, which have been pre- viously placed in a crock or water-tight barrel. Sorse authorities recommend the additien of a pound or so ot ealt tothe lime- water, bui the writers areof the opinion that this is unnecessary, aod probab'y leads to the imparting of a limes flavor to the eggs by inducing an iaterchaoge of the fluids within and without the egg. The all essential points to be remembered are: (1) tbat the eggs to be preserved shal! be perfectly fresh, and, (2) that they shal! be covered with the preservative fluid. Frank T. Sir,—Last week’s cUuadianr contain- ed two ediorials, one on Costigan’s tumble tato the Liberal column, the other about Mr. Wise’s vote against the Government of the Provirce on @ resoiut.on asking for an enquiry ‘nto our financial condition. Contrast the tone of thetwo articles, The writer defends Costigan for deserting the Conservative ranks, when they are out of office and for yoing over to the Liberal side ince tuev are in power; nd in anotrer columa makes some very nean sniveling insinuations about Mr. Wi-e’s very independen. course in voting ‘garnet bos party, although they are in ver, and iv favor of a resolution that if passed would have defeated the rovevomeont and have thrown his party out f office. Now sir, The Guardian posea aod ad 48 «680 6(ind+pendent journal, “free nntramelied,” vet do avyof its readers remember ever seeing an article in its editorial! columns favorable to the Conservative party. Did it sound the praises of the Hon. Daniel Gordou, Mr. Cyrue Shaw and the other Conservatives who voted against ihe Liquor License Bill? No, avd it will not call upon the electors of this Island to tura cut the varty of compromise and return those men to power who voted against that bill. But it will make a great show of fighting against rum. It will net go far enough to advocste the over-throw of those men who have gone go far back on these prin~ ciples as to have a rum source of revenue. Should not Temperance Donald’s fingers burn as he touches the “blood money,” for che taking of which he hopes to receive the liquor vote. He says, Limagine to the publicane, the words Artemus Ward wrote tothe editor, “You ecratch my back and I’ll scratch yveurs” when he wished him to boom his show. Now, -granted that both Costigan and Wise voted as they did from conscientius motives would it not have been more in place for, an independent paper to have praised them both for this action im voting against their party when they thought it was wrong; a virtue chat is at present very rare, instead of making fun of one because be voted against the party that safeguards the “club and ite Jambnees,” and Jauding the othere because he has gone with that party.
