They adopted cream grading on the first of August and patrons de- livering sweet cream of good flavour are allowed it premium of two cents per pound of butter' fat more than is paid the indifferent patron who de- livers cream that is sour ond oft' iiavour. it ls understood the results so far have been very satisfactory, There is no doubt that most of the sour and oft'-flavoured cream delivered to the creameries is due to carelessness in washing the cans and separators and keeping the cream in old rusty cans which should be discarded. A report from one creamery in the Marl- time Provinces that started cream grading this season ls: The first day 181/4 per cent of the cream delivered was second grade. A number of old rusty cans were discarded, the hand- separators got an extra washing and the second day only 1% per cent. of the cream delivered was second grade.
