workers occupied seats on the plat-

The Duchess said two million wo
men and girls were employed in , the

Four hard boiled eggs, one dozen

uhlespoons butter and one table-
poon white sauce. Shell eggs, eutln
alves rountiwiiys, take out the yolks

to ri smooth paste. Next. rub the
mixture through a sieve, put it back
in the mortar with the butter and
sauce, pound smoothly and season
carefully. Fill the whites of egg
with this mixture and arrange with
lettuce and olives,

Wash rice through several waters.
Put it. with salt and cold water
(three times us much water as rice)
in a saucepan and cook until rice is
dry. Cook slowly to prevent scorch-
ing. Then prepare the following
ance or gravy: Fry slowly in hot
utter or olive oil it chopped onion,
arlic, parsley, chili pepper and ony'
herbs desired. Then add canned to-
matoes or tomato sauce and let sim-
mer 30 minutes. Grate about fi hall
large cup cheese and add to gravy,
pouring it in slowly to prevent liimp-
ing. Pour over rice, stirring in well,
and set on back ol stove for live or
ten minutes.
Macaroni may be cooked in this
style and baked.

Take one can lobster or crab and
pick apart. Take one head of lettuce
waslicil clean but not pulled apart,
and shave if with nvery sharp knife
as you would cabbage for cold sluw.
Mix above with the following dress-
ing: Two tablespoons pure olive oil,
two tablespoons, vinegar, pinch suit,
a dash of paprika. Stir until thick
as cream, add one cup sotsup, whip
for n minute and serve nt oncc.--

which has been suggested by the Fed-
eration Du Tourlstes Francais, is re-

Minister of Commerce Messe. The
modern hotel, says the minister,
comprises two distinct services which
should remain independent of each

YORK HORSE SHOW.
NEW YORK, Nov. 18.-Society
llocked to Madison Square Garden to-
night, the opening night. of the twen-
ty-ninth annual horse show under the
direction of the National Horse Show
Association. Early this evening in-
dications were that the crowds might
not equal those of former years, but
as the judging was started the big
uinphitheatre began to fill rapidly,
und soon the throng in seats and
boxes about the arena edge approach-
