This winter, however, for the reasons already given, Amer- icans are short oi eggs and have since the revision of the tariff been actually importing themselves, over 8,000 cases of foreign eggs; have been received in New Yark alone during the week ending November 28th, It is tt.ese,¥f0reign eggs which are going tosave the .Canadian situ-ation. _It is expected they will have the etlect of averting a serious shortage and of reducing materially the price to the consumer. The Department of Agri- culture has been engaged for some months in an investigation of the Canndinn' egg trade. It finds, among other things, a. large increase in the per capita consumption of the pro- duct, The Canadian is eating more eggs. Where his father in 1891 ate 11.8 dozen eggs per year, he himself ents 17.39 dozen today, which means four dozen more eggs consumed by every man, woman and child in Can- ada. This increase is not by any means confined to the cities. Farm ers too, are eating more eggs than ever before. This is one reason why Canada, which once exported eggs, no\v imports them; and in"greater quantities. What is the conclusion of lt all? In Mr. Brown-'rs opinion ‘for the farmers and others to increase their poultry plants and take advan- tage of the high prices prevailing for poultry and poultry products.
