Eggs. '
Eggs are so nutritious and easily di-
spring food -especially for break-
fast when nature rebels against = the
fat meats and other greasy foods that.
were relished in winter. The receipts
given below are noe only new, appe-
tizing and wholesome, but with the ex-
ception of the patlies would make a
hearty enough breakfast for the hard-
est working farmer.
Egg Loaf, with Tomato sauce._-
Make enough muffin batter of white
flour for a loaf not over one inch thick
in a pie tin. When baked, invert on a
hot platter; pour one cupful (perhaps
more, according to sizf-)of liot tomato
sauce over the top. and lay a circle of
neatly trimmed poached eggs. evenly
spaced, near the edge that the loaf may
be served in sections like a pie.
Scalloped Potato and shirred Eggs.
-Scallop potatoes in a. dish that can
be put on the table; whén done spread
a few bits of butter over the top, cover
with eggs 'and return to the oven, for
six or eight minutes. Remove. season
with salt and pepper and one-half a tea-
spoonfui ofmelted butter to each egg,
'and serve at once.
Porsfro, Psnsnni' BUTTER, EGes.-
fButter a granite-ware or bright pie tin ;
spread one inch thick with well-seasoned
and moist mashed potato, brush .a little
melted butter over the top and brown
in the oven. Invert on a hot p'atter.
spread with parsley butter, and lay
poached eggs on the top, as for the
mufhn loaf.
Ecu PATTIES.--Bake shells of puff
paste in deep patty pans (these can be
kept on hand several days.) Make a
filling of almost any kind' of lean meat,
chopped fine and warmed in a little of
its own gravy--or with butter and a.
little water- and season with salt,
pepper and a little parsley or onion
'juice, or both. Fill the shells half full
over the top, and bake as for scalloped
potatoes. Serve at once. These are a
dainty and toothsome luncheon dish.
PARs1.sv BUTTER-Beat three table-
spoonfuis of butter to a cream; add one
half a tablespoonfui of lemon juice, one
tablespconful 0: flnely chopped parsley;
one half a teaspoonful of salt and a
little pepper.
