When Potatoes Breathe In the storage of potatoes it has always to be remembered that the potato is a living organism and that there are two periods when respiration may become ot practi- cal importance. One of these ls im- mediately after digging, and the other a period of several days foi- icwing a sudden rise in storage temperature. To prevent sweating, special attention should be given to the ventilation of potatoes hand- led in bulk immediately after dig- ging, and also after sudden rises in temperature following a period of steady cool storage. The ‘ lower the storage temperature, the higher will be the initial rate of respira- tlon at s sudden higher tempera- ture. Sudden rises and falls in storage temperatures are to be avoided always.
