It is not the freezing of vegetables or fruits that leads then to quickly ’ sudden temperature, which , causes them to thaw too quickly. The contraction and expansion of heat and cold affects all substances, and the greater the heat or cold, the more injury isdone. There is annually a large loss in winter from the effects of frost, and farmers find it more difficult to store | certain crops, such as turnips, beets, | rise ol harvest them. Dampness affects vegetables and fruits, and even during periods of ex- treme cold on and potatoes will keep in good condition if they are in a very dry place. Cellars are not always dry, owing to the liability of moisture ascend- ing from below the floor. It will not serve the purpose to have a storehouse too warm, as heat is not beneficial in the winter to articles that should be kept near the freezing point. The firsc | thing to provide, however, is shelter, such as a shed that is somewhat openor | well ventilated, but which will not per- | mit moisture to enter. The next point | isto guard against sudden freezing or | | thawing of the articles. that will keep them at about forty de- | grees, or just above the freezing point, | will be of advantage, but should they happen to freeze, then the object should | be to prevent sudden thawing, which is sure to prove injurious STORING AND PACKING. articles as turnips, carrots, beets, and parsnips can be stored under mounds outside, but they become sealed | up with frost, and are not always con- | venient for use. It has been found that when all imperfect or injured roots are discarded, and those that are sound are packed in bins, with dry, clean dirt, or sand used for filling the interstices be- | tween them, allowing a layer of dirt and a laver of roots, they will keep in good condition ina cool place in a dry location; and potatoes have been brought out in prime condition when so kept. Apples should not have the slight- est bruise or blemish, andif wrap in tissue paper and then nicely packed in | barrels, or boxes or even on shelves, they will keep a longtime. OCTOBER FARN TALK. The Proper Temperature for Churning —Various Notes. The proper temperature for churning depends upon circumstances. Experi- ments demonstrate that for churning ripened cream the warmer the cream to 70 degrees the sooner the butter comes, but the softer the butter. The lower the | temperature, though it will require a longer time, the firmer the butter. From §6 to 60 degrees in summer is nearly correct, though each churper must de- termine for himself, as the temperature | of the churn and of the atmosphere must be considered. The temperature in the churn rises atter churning begins ow- ing to friction. ~_ Sheep will eat nearly ali kinds of young and tender herbage, and they graze very close tothe ground. They prefer a variety of food while on the pasture, and will not confine themselves toasinglediet. When kept in the barn- | yard in winter they should be given a | variety also as much as possible for the season. It will pay to make deep furrows in the wheat tield with the plow, if the land is somewhat flat, in order to drain off the surplus water and avoid liability of the plants being thrown up by frost. Potash in the soil is a special food for certain plants, and if it is deficient the crop will be starved out although the soil may be rich in other substances, It is / sugar, and exerts an influence on the | soil as a chemical reagent which permits | the plants to appropriate other foods in the soil that would otherwise be out of their reach. At the recent lowa State Fair, in a ) competitive test, a Holstein cow vielded ; 123.86 pounds of milk in three days, or ' 44.62 pounds per day {equal to about 23 | quarts) as well as produced over two pounds of butter perday. This test was public, and was made for the benefit of those interested among the visitors. The vield, however, is not extraordinary for the breed eo ee When an animal becomes choked while eating potatoes, turnips, etc.. it | is stated that by holding up its head and breaking an egg in its mouth reliet is obtained immediately. according to one who has tried the experiment. Room in the stables and barnyard is valuable, yet the best animais are some- times crowded by those that are unpro- firable. When onthe pasture there is less injury from crowding, but in the barnyard there is a deprivation of com- fort and contentanent if too many ani- mals are kept. They have less space for exercise, and alse compete with each other for food when it is placed before them to pick over. It does not pay to keep more stock than can be made com- fortable.
