The long severe winter in this region renders it absolutely essential to preserve eggs, if they are to be had during thie season. The principle involved io preserving egge is the preservation cf the, mucilagenous Coating, which natur- ally covers the shell, and which preven's the entrance of the germs of decomposi~ tion. When the coating is remoyed, the egg begins to become “ stale ”, end the process of decay actually begins. The use of jime and sa't as means of preservation, never entirely succeseful,does not preserve the protecting covering on the shel. and no process can be euccessful unless it does this. Experiments have shown that water glass comes more nearly being a per - tect preservative than anything that has hitherto been employed. There is al- ways danger of the bursting of the shell of an egg that is thus preserved, when in bot water, but this disadvantage may be overcome by carefully piercing 1t with a needle. The question wil! naturally arise, if the preservatien of the surfaee of the ehel) in its natural condition is all that is necessary to preserve the egg, why could it net be coated with some preparation that would answer that purpose. It could be. Vaseline will preserve it aud might be used on a small scale, but it would require too much time, and cons? quently expense, to use this means ex- tensively. It should be within the the power of some inventcr to discover some sim ple and cheap method of preserving eggs, and thereby not only gain a fortune but aleo bestow an inestimable benefit upon the human race by placing within the reach of all a necessary article of food.
