. goat crop in many instances ever known) is CANADA FLOUR. Fiiou time to time we have made com- ments on the inferiority of a large portion of the flour imported into this port froin Ca- nada, the shortness of its weight, and the little faith that can be placed in the inspec- tor's brand. The following articles, copied from Canadian papers, give as some insight into the villany practised by some dealers, and will help us to account for the manner in which the frauds are perpetrated. Sonic weeks ago, the Montreal Gazette contained the following statement made by a farmer:- “ There is at least liulfa bushel of plus- ter of Paris in every barrel of Upper Cami- da Flour from the mills, and that iii- spected by Mr. as second quality. Mr. , a baker in , a fortnight ago re- turned 113 barrels out of ‘20 to some Montreal merchant, that contained so much plaster he could not make use oftheni. " A miller coiniiienting on this in the To- ronto Globe, tells a story of fraud which we hope cannot be told of any flour dealer south of the St. Lawrence and the Lakes. He says: * “ It is, or at least ought to be, generally‘ known that there are numerous dealers in; flour and mill olliical in Quebec, Montreal, j‘ Kingston, Coburg, Tot-ot.to and Ilamiltoii,l whose business it is to buy up the eniptyl barrels of such mills as are considered the 1 inaniifactiirers of the best quality of flour. l Into these barrels, with the original mill- brand upon them, is packed flour of the most iiifcrior quality they can purchase; and it is quite possible these same dealers, owing to the high price of tlonr, may have been tetnpted to adulterate tine flour. The wnrliti;_1ei- of the port of Toronto, could, I doubt not, testify to the truth of what I state, as largo quaiititics of what is kiioivn as iii."-..-i-iur l'.ii-nn~r’s flour is bought up and packed in stort-lioust-s and no dotibt else- where llll‘till'_[il0llI the city. I have even known the lw.-‘t qiiality of door made at iiiills t :kl‘ll out of the I|‘.Il‘I‘I'I and replaced with lI'Illl' little Ii:-ttcr lll-‘Ill good shorts. This I have I(Il'l\\'ll done in 'l‘oi-onto; and there are lll'3tl still kn urn in 'I‘oi-oiito who prac- tise and lllfll{t' a living by such a course and I liavc iiotloulit the Sillllt‘ thing is prac- ticed in all the places naiiitrd. ”— llliranii-; t‘/Ii (r'/ct:/iii‘, i l’i:ic:-. or tint;\i.s'i'i:i~'rs.-—'l'lie following, .'tt'ticlc wiil enable our rn.-itlcrs to form a. ii.itio:: how the prices of bi't-ad.-tuli's are at l ]II't‘.~'(‘lIl kept up, while the crops in the United States and Canada are the largest ever known, and in that Britain a full avci-age one. It is allirmed, that large quantities of wheat are being stored iiigran- I aries on the East coast; ‘gin one granary ' there are stored 5000 qrs. —it has bcenl bought nominally for export to France. It I is in truth, bought on speculation, to be sold to the best customer, whether French g or English. A great firm of London ordered thus in one day l0,000 quarters of wheat, to be bought in country markets, on condi- tion that no destination should be given for a fortnight. A longer period had elapsed, and no destination had yet been given. “It is by such men and such means that speculation ha been set afloat; and then all the shoal and small fry become speculators in their turn, till it large crop of wheat (in ~ the Eastern part of England a very abun-‘ dant crop—on the heavy soils in more abun- dant crop than last year—in fact, the lar- positivnly made to appear a small crop, and the price enhanced beyond the fears of the consumer, and certainly far beyond the most sanguine hopes of the farmer. This is about the acme of villuny. ” " Coitl.
