After February 2nd, 1953 vitamin- enriched flour can be used in the baking of white breadstulfs, pro- vided the product is .clearly labelled as "Enriched." This step offers the Canadian families the opportunit- ies for better health and the in- creased mental and physical vigor which have followed the use of en- riched flour in Newfoundland. Sweden, the United States, and other countries. The regulations dealing with en- riched bread stipulate that it shall be made of enriched flour only. containing closely regulated amounts of thiamine, riboflavin. niacin and iron and may also contain calculm. a mineral needed for sound teeth and strong bones. Enrichment of flour and bread assures us of a. daily supply of B- vltamins and iron. Bread is basic and is eaten more often and in larger quantities than any other food. It is economical and there- fore is eaten most often by low income families whose diets are apt to be inadequate. Enrichment in no way alters the colour or flavour of white bread and does not change the baking behavior of the flour. The only difference is the hidden advantage of added food values. Whole wheat bread is an excellent source of B-vitamins and iron but it is difficult to persuade consum- ers to use it generally. Unfortun- ately it represents only a small fraction of the total bread con- sumed. One retailer in Charlotte- town told me recently that since we have been boosting whole wheat bread in this column he can hard- ly keep up with the demand, that is encouraging!
