To aerate milk is to put air into it hence the importance of pure air when this is done aeration drives off the animal flavor, and the time to do this is while the milk is fresh and warm and for this reason aeration should be done at once after milking and before the_milk is cold. The flavor of the cheese and butter largely determin the price. The flavor of these depends, with acompetent maker, upon the flavor of the milk, therefore, the price depends toa great extent, upon the flavor of the milk. This -is something which depends, to a. larger extent, upon proper manage- ment of milk at the ffarm. Therefore patrons consider your position, and em- bacc the opportunity of doing all that is within your power to produce a first-class article in the raw material. Aeration may be done by dipping or by the use of an aerator. An aerator properly used is a great help but if abused it is a hindrance. Simply run- ning milk through an aerator without any further stirring is not suflicent. It should be stirred two or three times at intervals of 10 or 15 minutes after being put through one of these improve flavor should this be done, but also to prevent loss of cream in the vats. \Vhen paying by test is practised aeration and stirring will prevent :the cream from rising and consequently the milkwill give a higher- average test and one more uniform. The morning’s milk needs aerating as well as the evenings. Straining should begin before commenc- ing to milk by brushing oil’ all dust, hairs, straw, etc., from V the udder, and the body of the cow. Let it be the duty of some one person to go over all the-cows with a soft brush, or a. damp cloth before the cows are milked. An ordinary wire sieve strainer does very well, but we add to this by doubling cheese cloth or thin cotton so as to have two thickness. A cloth of some kind is necessary to catch hairs and fine dust. The cloth must be -kept clean. Scald it thoroughly each time after using. Cheese and butter are articles to be eaten by men and women. A great many forget this.
