A most interesting report of the Presbyterial meeting which was held at Bedeque on May 2, was given by Mrs. Robert Ma- chon and also by Mrs. J. M. Fraser. who gave some detailed accounts of the group discussion which was held during the after- noon ‘sewn. The offering was taken and de- dicated, and a report was given of hospital and sick calls during the past month. The next meeting is to be held at the summer home of Mrs. L. A. Wed., June 4, 1958 The Guardian Page 7 Top Off Chicken Dinner With A Peach- Pie Coke Stir in 11/2 c. grated raw potato. Slow-boil 15 min. Add 1 -tbsp. minced parsley. Peach pie-cake: Apricots, blue- berries or pitted cherries may be used iiisteadof peaches. This consists of two parts: Peach filling and sweet cookie pastry. Peach filling: Heat 3'4 c. can- ned peach juice. Combine 2 tbsp. cornstarch with 1/2 c. granulated sugar, ‘A tsp. powdered cinna- mon and 17% tsp. salt. Stir in the peach juice. Cook-stir 1 min. or until boiling. Add 2 c. drained, canned sliced peaches and 1 tsp. crushed fine- gvratecl lemon rind. Cool until te- pid. Sweet cookie pastry: Into a bowl, sift together 2 c. pre-sifted enriched flour, ‘A c. powdered su- gar and 1-3 tsp. salt. Heap it up. Make a depression in the centre. Into this drop 2 egg yolks, the crushed grated rind 1/2 lemon and -‘*4 c. room-soft shortening. Mix with a pastry blender until the shortening is distributed in small flask-es. With a fork gradually mix in 6 tbsp. cold water. Roll ‘/4 in. thick. Fit onto 2 (8 in.) pans. Do not build up the edges. Bake 15 min. in a moderate oven, 375 degrees F., or until lightly browned. Cool. To put together: Spread 1 pie- cake layer with the cooled peach filling. Top with the second layer. Dust over a mixture of powdered sugar and cinnamon. TRICK OF THE CHEF Season chicken fricassee gravy with celery salt and a little powd- ered ginger. CORRAN BANN C. W. L.
