Wullld Fmt(- T-_ _ wipped the -perspiration from his brew, shooed the ilies away from t-he milk cans and looked at the Citizen's correspondent. “I’ll tell youone thing about the milk business,” he said, in a. weary way. “There's a heap more watch-ing than praying about it.” The milk supply of New York repre- sents more watching and labor than the' average citizen dreams, as he pours his cream into the morning coffee. From 27,(lXlto%,tXl) cans of milk, each can holding forty quarts, are distributed in the city every day. When one realizes that almost all ofthis 1,120,000 quarts of milk is delivered before 7a. m., the fact conjures up a mighty vision of early morning hustling. By for the largest percentage of the milk comesfrom Orange, Sullivan,Dutchess and Columbia coun- - tries, and is brought on special milk trains, being from two-and a. half five hours on the road. Much of it reached New York at 7 p. m. Still more comes in at noon, and all of it is packed away in_ ice, at the various milk depots, until distribution time. The large dealers have a central dairy and branch departments in different quarters of the city, the milk when taken from the train_being trucked to these branch dairies, each of which has its own contingent of milk wagons and 1 employes. The`more important dairy firms A have from fifty to seventy wagons on the 25,000 quarts of milk each day. It is only within recent years that the bottle system of milk delivery has been introduced and the milkman’s troubles have increased with the innovation. The old-fashioned light wagons, in which the dipped milk was distributed, are im- practicable under the new regime, for the bottled milk is carried in heavy ice- packed cases and takes up much more room. Of course the bottled milk has its advantages. It isn‘t exposed to the air after it leaves the up-country dairy, and so runs less chance of being invaded by the germs that cut so large a figure in modern science. Then, too, thc cream is left- to rise is peace, and each bottle has its own quantity of cream, so that it is easytotell whether the milk has been skimmed or in any way disturbed. _Q-~ Trouble In Newfoundland.
