Clean Milk The welfare of the whole dairy industry is intimately connected with the sanitation of milk pro- duced on our farms. Much more than the average producer rea- lizes. the quality of our chseae, butter, ice cream as well as the milk consumed in the liquid state depends upon the efforts the tar- mcr puts forth to produce what is called clean milk. The high degree of quality which these manufac- tured products are able to reach will be limited by the producers ,alnlity to deliver it pure product. The handling in the manufactur- ing plants is important of course but no cheese iniiker. butter maker, or any other manufacturer can make it better quality product of the milk or cream delivered at the receiving yet. It is being more and more rea- ylized that quality in milk depends upon something else rather than the percentage of butterfat it con- tains. Payment on it butterfat basis is no doubt it good method but there is an equally just sys- tem and that is according to san- itary quality. Clean milk will bring benefits to the producer as well as consumer. A better grade of cheese and butter will react to the producer's benefit. Moreover, improvement in the sanitary quail- ty of milk will lessen the (farmer of having it rejected as tainted. sour or other wise unsuitable. If any further incentive is required to produce clean milk. we need only mention the lessened danger to the health of the procluct-.r'a fa.mii;; and livestock which fol- lows the use of sanitary methods about the farm. According to period one figures. hogs entering this at 50 pounds made a gain of 55 pounds in weight. Or. on the basis of the 177 pounds of feed fed, it gain of one ,poun(l for every 3.2 pounds of ti:-rs fed. Hogs entered period sight weigh- ing an average of 195 pounds each. They consumed 389 pounds ,of feed during the two-week test ,illld gained '11 pounds--or an aver- age of one pound for every 5.4 pounds of feed consumed.
