Uncooked meat should not be placed directly on ice, as the juiees are withdrawn in this way. Neither should they be kept in wrap- ping paper, but put, uncovered, in & dish or pan, and then placed on the ice. Meat on ie, Eggs and Bect-root.—Take some slices of dressed beet-root ; tess them in fresh olive oil made perfectly hot; arrange them ina dish; place some poached and trimmed eggs ina circle round the beet-root;add pepper; squeezo lemon juice over, and serve directly. Peas in American Style. — Only | enough water is used to boil them ten- der. When dry,add rich milk and plenty of butter; set them on the back of the stove to simmer tenor fifteen minutes, which brings the dressing to a creamy consistency. Season with salt and pepper. Blackberry Jam.—Allow half a ound of sugar to each pound of fruit. 30i] the fruit one-half hour,then addiog the sugar and “boiling ten minutes Skim out the berries and boil down the juice to about one-third, then pour it on the berries, and they will keep in any cool place. Gooseberry Jam.—Put your fruit in your kettle and bruise them as they cook, to get the juice out. Let them boil ten minutes and then add sugar in the proportion of three quarter-pounds to each pound of fruit. Let it boil! slowly two hours longer, stirring all the time, when it thickens like jelly when cold it is done, Season if you like.— Wild Bird, Green Pea Soup.—Cut up a chicken, or take a few slices of ham, and boil it until the meat is entirely done. Re- move the chicken or meat, and throw into the liquor a quart of shelled peas, some pepper and salt. Boil until en~ tirely done, and then chicken the soup, when you may add another pint of eas boild ina different vessel anda ump of butter the size of a goose egg. cS A Aphorisms.
