LIGHT CHRISTMAS CAKE 3 pounds raisihs 1 pounds currents 1% pounds glazed cherries. or 3 cups mairaschlno cherries 1 pound chopped mixed peel 1 pound chopped nuts 4 cups flour 1 teaspoon soda l teaspoon salt 1 pond butter 1 pound sugar i3 eggs l4 clip fruit juice 2 teaspoons flavoring METHOD: Wash the raisins thoroughly. If cur-rants are avail- able, wash these well also. 1f you haven't any curt-ante, however. you might substitute a pound more of raisins for them Let the washed fruit stand in hot water for a few minutes to plump them somewhat, then drain and dry very thoroughly between towels. Place the batter in oelte pans that have been lined with well greased heavy paper. Bake the cakes in a sloiw oven (275 deg. F.) The small pan. 4 by 4 by 2% lmhes. will take about 4 hours baking.
