The result was that the 1943 milk pro- duction (r7,516,918,ooo pounds) was greater than that of 1939 by 1,753,436,000 pounds, equivalent to an increase of 11.12 per cent during the five-year period (1939-43). In other words, the increase in total milk production in Canada during the first five years of war was .80 per cent greater than the increase during the five years immediately preceding the out- break of hostilities. . In the five-year period, only 16.12 pgf sent of the increase in milk production was used in the manufacture of butter. Ordinarily about one-half of all the milk produced in Canada is used in butter-making. About (23.77 per cent) of the increase was used to make cheese.
