Shoulder, roast can be roasted with dry heat and shoul- der chops broiled or panafniend. Round bone shoulder chops are more tender than the blade chops. llf you can get your bufbcher to 0102 and roll the shoulder roast the carving problems will be simplified and the cheaper shank neck and breast meat will have been excluded. ‘

Try lamb patties for quick dim ners or for the children as lam- burgers. Mock duck is another favorite, made from the outside of the shoulder and including shank, arm and blade. Lamb Kalbdhs, broiled or barbecued, are delicious and simple to pre- pare. Cut lamb (usually the shoulder) into one inch cubes, Nice alternately on skewers with either mushrooms or tom- ato wedges and slices of bacon, pileaple chunks, etc.
