Cake Baking

Experts in cakemaking very say that the whole secret lies in the baking. There is deal of truth in this, and it applies specially to rich solid cakes, which are not difficult to make, but are rather | difficult to bake. The followirg rules are well worth remembering :

Light cakes require a rather brisk oven to raise and set them. Cakes raised with chemicals, such as baking powder and its equiyalents, also require a quick oven. Cakes that have much sugar in them are apj to burs quickly. Therefore for them the oven must nat be so hot.
