TODAY'S TREAT SALMON AND PEAS SOUFFLE

1 cup hot milk

% cup soft bread crumbs

% teaspoon salt

1-4 teaspoon paprika

1% cups flaked salmon

% cup peas

2 eggs ites only)

Method — Cook bread crumbs, butter and seasonings in the hot milk for 3 minutes. Add salmon and peas, fold in whites of eggs which have been beaten stiff. Put in greased dish‘ and bake about 25 minutes in moderate oven. This is a delicious never- fail Souffle.

LEMON PUDDING

1 tablespoon butter (softened) |_% cup white sugar

“% teaspoon salt

Yolks of 2 eggs

Method — Beat all ingredients together thoroughly. Add--gratea rind. and juice of 1 lemon. Add 2 tablespoons flour (scant). Beat 2 egg whites stiff, and fold into mixture. Add 1 cup milk. Bake in casserole in pan of hot water in moderate oven 350 degrees for 23 minutes. You have a light top and sauce underneath.
