Cates Heart Roastrp.— Put the heart in luke-warm water for an hour, then wipe it dry; stuifit with a nice ane highly-scasoned veal stuffing or ~~ meat, cover it with buttered paper, an get it down to toast ie a good oven from half an hour to an hour depending on the, size; serve it with any good gravy.

Crea Rics Pupnixe.—Wash four ounces of rice through two waters, put 1C in a baking dish with three ounces of sugar and a teaspoonful of flavoring ; pour ia three pints of milk and putivio a moderate oven, and bake one hour and a half.or until it is of acreamy consistency. This is very delicate and wholesome.

Hinrs on Wasaina.—Clothes suould | not be soaked over night ; it gives them a grey look, and the soiled darts lying against the clean portions streak them. Rub the clothes in warm, not hot water, for hot water sets, in place of removing the dirt. Wash flannels in luke-warm. water, aad avoid rubbing soap on flannels

Fowr Inp1an Fasuton.— Take the meat from a cold fowl,-and cut it in small pieces. Put half a piat of well-fi ivored stock into a stewpan, add a little salt, pepper and nutmeg, and thicken with four and butter; let it boil, then put in| the pieccs of fowl to warm ; after stewing sufficiently, serve with some poached eggs jaid on the hash, with a sprig of parsley in the centre, and garvish round the plate with pieces of fried bread.

Sir Henry Bessemer himself planned eut all the lovely lawn and terraces of his estate of Denmark Hill. We is now i busy building himself an observatory, des- tined to obtain a telescope capable of mag- nifying 5000 times. He hasa very large fortune, and has fallen back on astronomy for a pastime.

France is a happy country, says a Man- chester paper. While every other nation in Europe is bemvaning over deficits and financial difficulties, her revenue is pouring in and exceeding the estimates by large sums. The returns for the month of Sep- tember have just been made up, and they show that the receipts exceed the estimates by 14,000,000 franca. The total sum re- ceived during the first nine months of the present year exceeds the estimates by 108,- 000,000 francs. So that, if France con- tinues to progress financially during the last quarter of 1879 in the same ratie as she has done during the past three quar- ters, at the end she will find herself the possessor of a surplus of between $20,000,- 000 aud $30,000,000.
